Halushkies
Chlebus family recipe
Take about a half pound of salt pork, chop into small pieces. (Is easiest to do while still frozen) Fry in a large pan until cooked. Do NOT drain the fat. Grate one medium cabbage and one large onion and add to fried salt pork. Continue to fry until the cabbage and onion are cooked. You may have to add some cooking oil. While frying: Take 10-12 medium sized potatoes and peel and grate them until very mushy. Easiest in a food processer. They should be very watery. Add one egg and enough flour to make a fairly thick batter almost like oatmeal, and salt and pepper. Mix thoroughly. Boil water in a very large pot and add salt. Put about one cup of the mixture on a bread board. Using a sharp knife, shape the batter into little bite size balls and push them off the bread board into the boiling water. Allow to boil for about 4 or 5 minutes after they have floated to the top of the water. Scoop out and set aside in a strainer. When all the batter is cooked into little halushkies, add the cabbage mixture and halushkies together. You may need to reheat them either in the oven or in the microwave. They are very good topped with grated cheddar cheese and/or sour cream.
